Many savoury recipes call for an onion or two, and us cooks know how much of a chore peeling, chopping, slicing and dicing onions can be, one that often leads to a lot of tears shed. There are many so-called hacks to stop the crying, including chewing a piece of bread, sucking on a teaspoon, wearing goggles, preparing the vegetable in water etc. The problem is none of these really work. Believe me, I’ve tried them all.
Fortunately, my favourite chef, James Martin, recently showed me a quick way to prepare an onion without the tears. The photos speak for themselves how this is achieved.
